The business was founded by chief executive officer Molly Moon Neitzel in 2008. Ice cream is made on-site in each of its shops, rather than in central commissaries, to avoid the possibility that ice cream will partially melt and refreeze during delivery. "From kitchen to cone, every scoop is the result of hard working, happy staff, strong local partnerships, sustainable practices, and of course, the finest ingredients we can source." "We source 90% of our ingredients from the Pacific Northwest. Buying from farmers in our community keeps dollars in our local economy, and it cuts down on the amount of fossil fuels needed to transport ingredients to our Seattle kitchens. All of our ingredients are either local, organic, or fair trade, and many are two of the three."
